What is Ilonggo Cuisine? It is a cuisine that we Ilonggos have something to be proud of. For example, our very famous La paz Batchoy, that originated here in La paz. We should really be proud of our own special batchoy because even some of the tourists comes back for more. Through Ilonggo Cuisine, we can share this with other people and to show to them how proud we are of these kinds of food and how it gives back pride to our own city.

But wait, there's more. We should not be greedy about our cuisines here. We have also our very own Kadios, Baboy, Langka. Some might ask what is the taste of it. Some might say it tastes weird. But it is actually delicious, if you ask me. The flavor of the jack fruit really blends in with the flavor of slow cooked pork. It's nice to eat this dish right after it is straight off the pan. My personal choice to eat this is with rice. In every occasion we cannot just simply say that there's no rice rice right? because we Filipinos are really a fan of eating our meals with rice.

We also have our very own fresh lumpia. This type of roll is very healthy because there is no meat and all of it's ingredients is made up of thinly sliced vegetables, not cooked. With just the smell of it is to die for. It's really fresh and tasty too. It has a blend of spices and nutty flavor at the same time.

Kinilaw is our next cuisine. There are many versions of kinilaw: na isda, dilis, puso ng saging, pusit, talaba, labanos and amapalaya. But most of us ilonggos prefer "Kinilaw na puso ng saging" because of its unuasual taste. I never tasted one but they say it's really delicious. There was a time when my sister made kinilaw na puso ng saging at home. She asked for the puso ng saging at our neighbor's because they have a lot of banana trees at the back of their house. While she was preparing it, I was curious of what it actually tastes and it really look unappetizing. But when I tasted it, I was surprised it was really delicious and I kept asking for more!

Lastly is the Laswa. It is a dish that is made up of vegetables and what makes it special is that, shrimp is included in one of the ingredients. It is better to prepare this with the shrimp's head and shell. This dish originated here, in Iloilo. This dish is best eaten with rice and while it is still hot. This dish is not only healthy but is also packed with flavors from the different vegetables.

Ilonggo Cuisine is really important to us because this is one way of promoting to others, the food that originally came from our city and how we should give honor to it as it also gives back pride to ours.
